Why Farming Without Irrigation Matters

Wine terminology can get complicated quickly.

Natural. Organic. Biodynamic. Regenerative. Minimal intervention. Native fermentation.

And then there is dry farming—a term you'll increasingly see attached to vineyards and wines, particularly as conversations around water, climate and the future of agriculture become more important.

But what does dry-farmed wine actually mean?

At its simplest, dry-farmed wine is wine made from grapes grown without routine irrigation during the growing season. Instead of relying on added water through drip lines or other irrigation systems, the vines depend primarily on rainfall stored naturally in the soil.

Simple idea.

Much more complicated ecosystem.

And for us at Prinsley, dry farming is interesting not because it makes a good phrase on a wine label, but because it invites us to look beneath the vine—to soil, roots, water, farming history and what allows a vineyard to become resilient.

What Does Dry Farming Mean in a Vineyard?

Dry farming starts long before grapes become wine.

In an irrigated vineyard, growers can deliver water directly to the vines, most commonly through drip irrigation. This gives farmers another tool for managing vine growth and water stress throughout the season.

A dry-farmed vineyard takes a different approach.

The vineyard relies primarily on seasonal rainfall and the soil's ability to capture, store and make that water available to the vine over time.

That makes everything below ground incredibly important.

Soil type. Organic matter. Root depth. Soil structure. Rainfall. Vineyard age. Climate. Cover crops. Competition. Farming practices.

Dry farming isn't simply about turning off the irrigation.

It is about creating—or inheriting—a vineyard capable of functioning without it.

Does Dry Farming Make Better Wine?

This is where I think we need to be careful.

You'll sometimes hear sweeping statements that dry-farmed vineyards automatically produce better grapes, deeper roots or more flavorful wines.

Wine is rarely that simple.

A beautifully managed irrigated vineyard can produce extraordinary wine. A poorly managed dry-farmed vineyard isn't inherently superior simply because no irrigation was used.

Site matters.

Climate matters.

Soil matters.

Farming matters.

Vintage matters.

The human making those decisions matters.

What dry farming can do, under the right conditions, is encourage a vine to interact with a larger volume of soil in search of available moisture rather than depending primarily on water delivered near the surface.

For winegrowers interested in expressing place, that relationship between vine, root system, soil and season can be fascinating.

Dry Farming and Deep Roots

You've probably heard someone say that dry farming “forces vines to grow deep roots.”

Sometimes that's directionally true, but again, nature doesn't love absolutes.

Grapevine roots grow where conditions allow them to grow—where they can find water, oxygen, nutrients and penetrable soil.

In an established dry-farmed vineyard, roots may explore a substantial soil profile to access stored moisture. But rooting depth is also influenced by soil composition, compaction, bedrock, vineyard age, rootstock and many other factors.

So rather than saying:

Dry farming equals deep roots.

We prefer to think:

Healthy, well-structured soil gives roots the opportunity to explore.

That's a much more interesting conversation.

Why Soil Health Matters So Much

This is where dry farming and regenerative agriculture begin to intersect.

If rainfall is your primary water source, what happens when that rain hits the ground becomes critically important.

Does it soak into the soil?

Or run away?

Can the soil hold moisture?

Is the surface bare and compacted?

Are roots able to move through the soil profile?

Is there biological activity helping cycle nutrients and build structure?

A vineyard with healthy soil can function almost like a reservoir—capturing rainfall when it arrives and holding more of that moisture for the growing season ahead.

Practices that improve soil structure, increase organic matter, reduce unnecessary disturbance and maintain living roots can all play a role in improving the way water moves through an agricultural system.

This is one reason Rea and I are so interested in regenerative farming.

The question becomes bigger than:

How much water are we applying?

It becomes:

How effectively is this landscape using the water it already receives?

Is Dry-Farmed Wine More Sustainable?

Potentially—but “sustainable” is another word that deserves context.

In California, water is an extraordinarily valuable resource. A vineyard capable of producing healthy fruit without regular irrigation can obviously reduce its dependence on applied water.

That's meaningful.

But water use is only one component of an agricultural system.

A dry-farmed vineyard can still be managed in ways that degrade soil. An irrigated vineyard can be farmed thoughtfully, biologically and with exceptionally efficient water use.

So we don't see dry farming as a sustainability badge.

We see it as one farming strategy within a much larger system.

The more useful questions are:

How is water being managed?

How healthy is the soil?

How much outside input does the vineyard require?

How resilient are the vines?

What is happening to biodiversity?

And can this vineyard continue producing beautiful fruit while improving—or at least protecting—the ecosystem that supports it?

Those questions tell us much more.

Can Every Vineyard Be Dry Farmed?

No.

And this is important.

Dry farming isn't appropriate or even possible everywhere.

Rainfall, soil depth, soil type, climate, vine age, rootstock, vineyard design and the needs of the growing season all influence whether a vineyard can successfully farm without irrigation.

Young vines in particular need enough water to establish healthy root systems.

And as California experiences increasingly variable weather—wet winters, drought, extreme heat and unusual growing seasons—farmers need flexibility.

Regenerative farming shouldn't be ideological.

It should be observant.

The goal isn't to follow a rule regardless of what the land is telling us. The goal is to create healthier, more resilient agricultural systems and make thoughtful decisions within them.

What Does Dry-Farmed Wine Taste Like?

There isn't one “dry-farmed wine flavor.”

You can't reliably taste a glass blind and declare, “Ah yes, no irrigation.”

What you taste is the result of an enormous combination of factors: grape variety, site, soil, vintage, farming, harvest decisions, fermentation, aging and winemaking.

Dry farming may influence vine vigor, berry development, yields and ripening, which can ultimately influence the wine.

But if you're interested in dry-farmed wine, I wouldn't search for a particular flavor.

I'd search for the story of the vineyard.

Ask where the wine comes from.

Ask how old the vines are.

Ask about the soil.

Ask how the farmer manages water.

Ask why dry farming works on that particular site.

That's where wine becomes much more interesting.

Dry Farming in California

Dry farming isn't new.

Long before drip irrigation became commonplace, many California vineyards were established and farmed without modern irrigation systems. Some of the state's historic vineyards and old-vine plantings continue to demonstrate how grapevines can survive—and sometimes thrive—with remarkably little intervention when site, soil and climate align.

Today, that history feels newly relevant.

California farmers are facing questions around drought, groundwater, extreme weather, soil degradation and the long-term resilience of agriculture.

We aren't going backward.

But there is tremendous wisdom in understanding what older agricultural systems got right—and combining that knowledge with what we now understand about soil biology, ecology and modern viticulture.

What grows between the vines?

What does the vineyard require from the farmer?

And what will this land look like twenty, fifty or one hundred years from now?

Dry farming can be one beautiful piece of that conversation.

But the larger goal is resilience.

So, What Is Dry-Farmed Wine?

Dry-farmed wine comes from grapes grown primarily without supplemental irrigation during the growing season, relying instead on rainfall and moisture stored within the soil.

But the more interesting story isn't simply the absence of irrigation.

It's what makes that possible.

Healthy soil. Thoughtful farming. The right site. Established roots. Careful observation. And a relationship between vine and place that can't simply be manufactured in the cellar.

That's what fascinates us.

Because before wine is a beverage, it is agriculture.

And before there is a bottle on the table, there is soil beneath our feet.
